As part of Aether Supper Club series, we are kicking off this summer with a weekend of multi-sensory dinner parties:

On June 11&12, we are collaborating with nomadic chef Nico Gellon for two rounds of unique dinning experiences - in the magical coastal setting of Villa Aether, Nico will introduce both traditional and bold flavours cross the Mediterranean region from Greece, Turkey to Spain and Middle East - it’ll feel like a dreamy escape to the Mediterranean’s seafront. 

At the dinners, our sommelier Brian Devaux will also present some of the best natural, organic and biodynamic wines sourced from a few of the world’s oldest vineyards from Croatia and Georgia. All the wines are made from native grape varieties in small wineries with a limited production dedicated to quality. Be mesmerised by the magnificent sea view as you sit back, indulge and sip on a glass of the finest wine.

June 11&12 (two dinners can be booked separately) 

5pm Arrival at the villa with free shuttle from Central

5-7pm Cocktail reception, live piano

7-9pm Dinner and wine pairing

9-11pm Food & drinks continue, live DJ, mingle and dance

11pm Free shuttle back to Central 


Chef of The Night - Nico Gellon

Chef Nico Gellon is a nomadic, innovative, and experimental visionary. The prodigy of his thrilling experiences are symphonies of hand-picked, earthy dishes.
Born in Argentina and raised in Ireland, Chef Nico started cooking at an early age of 12 to support his family. He discovered his passion when working in the kitchen when he was 15. After he left his hometown Dublin, Nico worked in farms and restaurants in Portugal, Spain, Holland, Switzerland, France and Italy. Having to refine his practices around the world, he finds himself constantly creating, experimenting, and pushing boundaries.  This allows him to connect within, follow his instincts more clearly, and create his own original dishes.

Sommelier of The Night - Brian Devaux

Brian's passion for wine started at a very young age. He pursued his passion further by beginning his hospitality training in Bordeaux- the heart of the vineyard. Since then, he's been traveling and exploring all across the world to study more about wine. With over 12 years of experience as a sommelier, Brian has worked with some of the best in hospitality and F&B. In 2018, he was being awarded the best sommelier by Gault & Millau. Brian continued his dedication to this passion through creating Cradle Wines which is all about discovering native grape varieties and honouring the vineyards, their winemakers and their traditions.
